Cake:
1½ cups all-purpose flour
1½ tsp baking powder
¼ tsp salt
5 large eggs, separated, at room temperature
1 cup granulated sugar, divided
½ cup MALK Unsweetened Coconut Milk
⅓ cup neutral oil
2 tsp ube extract
½ tsp vanilla extract
Tres Leches Soak:
1 cup MALK Unsweetened Coconut Milk
1 can (14 oz) sweetened coconut condensed milk
1 can (12 oz) evaporated milk
1½ tsp ube extract
Purple Whipped Topping:
16 oz whipped cream
¼ tsp ube extract
For Garnish:
Coconut flakes
Preheat oven to 350°F and grease a 9x13 baking dish.
Whisk together flour, baking powder, and salt in a bowl and set aside.
In a separate large bowl whisk egg yolks with half sugar (½ cup) until pale and slightly thickened. Whisk in MALK Unsweetened Coconut Milk, oil, ube extract, and vanilla extract until completely smooth and evenly purple. Fold in dry ingredients until combined, do not overmix.
In a clean bowl with a clean whisk or beaters, whip egg whites on medium speed until foamy. Gradually add remaining ½ cup sugar and whip until stiff peaks form.
Fold a third of the whipped egg whites into the ube batter to lighten it, then gently fold in the remaining whites in batches until no white streaks remain - fold gently and slowly to keep as much air in the batter as possible.
Pour the batter into the prepared baking dish and smooth the top. Bake for 30–35 minutes until a toothpick inserted in the center comes out clean. Let cool completely in the pan, about 1 hour.
While the cake cools whisk together the MALK Unsweetened Coconut Milk, condensed milk, evaporated milk, and ube extract.
Once the cake is fully cooled, poke holes all over the surface using a fork or skewer, spacing them about 1 inch apart.
Pour tres leches mixture over the cake slowly and in stages - pour about a third, let it absorb for a few minutes, then pour another third, and repeat until soaked. Cover and refrigerate for about 4hrs. Fold 1/4 tsp ube extract into whipped cream. Top cake & serve 📹:
