My name is Andy Lin, owner of the Hood Pro Cleaning company. 28 years served in restaurant business , I know how important that is to keep the restaurant exhaust hood clean. Grease is one of the most flammable and combustible items in your restaurant , it’s the most leading cause of fire in the restaurant industry , approximately 7,400 food service business fires each year.
According to the NFPA code 96, section 12.6 , The entire exhaust system shall be inspected for grease buildup by a properly trained, qualified and certified person acceptable to the authority having jurisdiction. If , upon inspection , the exhaust sy stem is found to be contaminated with deposits from grease laden vapors, the contaminated portions of the exhaust sy stem shall be cleaned by a properly trained , qualified and certified person acceptable to the authority having jurisdiction.
According to NFPA code 96, table 12.4 , exhaust system should be cleaned monthly , quarterly , semiannually and annually , depends on the type and the volume of your cooking. ( see picture ) If the grease measured depth of 0.078 inch is observed , the surfaces shall be cleaned , and 0.125 inch for for the fan housing.
