🌽🌭 A childhood favorite making a comeback!

Tonight’s supper was one of those simple meals that brings back a lot of memories — hot dogs fried inside corn tortillas. I call them Mexican corn dogs, and I’ve been making them since I was a kid.

Nothing fancy, just crispy tortillas, juicy hot dogs, and a whole lot of love. The best part? My kids loved them just like I did growing up.

My hubby, however, had his own idea of comfort food… a banana sandwich with mayo. 😂 You either love it or you don’t!

🥶 Cold mornings have a way of bringing back the warmest memories.

Today’s breakfast wasn’t just a meal — it was a trip back in time. Growing up with 10 kids in the family, money was tight, and my parents knew how to stretch every dollar without ever making us feel like we were missing out.

Those “imperfect” hot dogs, bologna scraps from the packing plant, day-old bread from the Wonder Bread store, and homemade meals became the flavors of childhood. Bologna gravy over bread wasn’t fancy, but it was filling, comforting, and made with love.

My mom could bake the best homemade bread, rolls, and cinnamon rolls, but I can imagine how special it felt for her to pull a loaf from the freezer and make a simple meal that fed her family.

Funny how the foods we grow up with become the ones we miss the most. ❤️

Sticky Honey Garlic Glazed Ribs 🍯🔥

Fall-off-the-bone tender ribs covered in a beautiful sticky honey garlic glaze — the perfect combination of sweet, savory, and garlicky goodness. These ribs are easy enough for a family dinner but impressive enough for your next BBQ gathering.

Ingredients

For the Ribs:

2 lbs pork ribs (baby back or spare ribs)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika (optional)

For the Honey Garlic Glaze:

1/4 cup honey
1/4 cup soy sauce
3 tablespoons brown sugar
4 cloves garlic, finely minced
1 tablespoon apple cider vinegar
1 teaspoon sesame oil (optional)
1/2 teaspoon red pepper flakes (optional for a little heat)

For Garnish:

Sliced green onions
Sesame seeds
Instructions
1. Season the Ribs
Preheat oven to 300°F (150°C).
Pat ribs dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
Place ribs on a foil-lined baking sheet and cover tightly with foil.
2. Slow Cook Until Tender
Bake ribs for 2–2½ hours until the meat is tender and pulls away easily from the bone.

🥩 First Time Prime Rib Success — Slow Roasted & Full of Flavor 🔥

Finally got around to trying my hand at cooking a prime rib, and I have to say… it turned out pretty dang good! This was made with a cheaper rib roast, so I can only imagine how amazing it will be with a higher-quality cut next time.

Beautiful crust on the outside, juicy tender slices inside, and that classic prime rib flavor. Definitely something I’ll be making again! 😋

Serves: 6–8
Prep Time: 20 minutes
Cook Time: 2–3 hours (plus resting time)

INGREDIENTS

For the Prime Rib:
• 1 standing rib roast (5–7 pounds)
• 2 tablespoons olive oil
• 4 cloves garlic, minced
• 2 tablespoons kosher salt
• 1 tablespoon coarse black pepper
• 1 tablespoon fresh rosemary, chopped
• 1 tablespoon fresh thyme, chopped
• 1 teaspoon onion powder
• 1 teaspoon garlic powder

For Serving:
• Au jus or beef gravy, optional
• Horseradish sauce, optional

INSTRUCTIONS

1. Prepare the roast:
Remove the prime rib from the refrigerator about 1–2 hours before cooking to allow it to come closer to room temperature.

Pat the roast dry with paper towels.

2. Season generously:
Mix olive oil, garlic, salt, pepper, rosemary, thyme, onion powder, and garlic powder into a paste.

Rub the seasoning mixture all over the roast, making sure to coat the entire surface.

3. Roast the prime rib:
Place the roast bone-side down in a roasting pan.

Cook at 450°F for 15–20 minutes to create a beautiful crust.

Reduce the oven temperature to 325°F and continue cooking until the internal temperature reaches your desired doneness:

• Rare: 120–125°F
• Medium Rare: 130–135°F
• Medium: 140–145°F

4. Rest the meat:
Remove the roast from the oven and loosely cover with foil.

Let it rest for 20–30 minutes before slicing. This allows the juices to redistribute and keeps the meat tender.

5. Slice and serve:
Cut thick slices of prime rib and serve with au jus, mashed potatoes, roasted vegetables, or your favorite steakhouse sides.

A first prime rib is always a learning experience, but when you get that juicy center and flavorful crust, you know it was worth it. 🥩🔥
