Farmers like to talk about the weather. We think about the weather and the seasons unceasingly. There's a cadence to every year that's different for every farmer and every different climate and every different kind of farm. For us, growing hogs on pasture and woodland areas takes about 6 to 8months. During that time we pay attention to the weather and their needs for that season. We move them frequently and then let the land rest. We make sure they have good nutrition and lots of loafing space - because pigs like to loaf and wallow like no other. It's a lot of work. When it's time to put them in the freezer, we pay attention to the weather too - is it the time of year that everyone is going to want roasts? Will link sausages sell better right now? And as we get close to the next group of hogs finishing on pasture and ready to go in the freezer, we need to make sure we're honoring the whole animal by selling down the whole animal. And so, as we near the time for us to make space in the freezer for the next group, we hope you'll help us out by buying some of these links!
