Oatmeal Creme Pie Cheesecake 😍😍

🔸Ingredients🔸

1. **For the base:**
- 6-8 oatmeal cookies (Oatmeal Creme Pies) depending on size, crushed.
- 75 g of melted butter.

2. **For the filling:**
- 500 g of cream cheese (Philadelphia type).
- 200 g of sugar.
- 3 eggs.
- 2 teaspoons of vanilla extract.
- 120 ml of sour cream or whipping cream.
- 2 oatmeal cookies (Oatmeal Creme Pies), crushed.

3. **For coverage:**
- 2 oatmeal cookies (Oatmeal Creme Pies), cut into quarters or slices.
- Whipped cream (optional).

🔸Instructions🔸

1. **Prepare the base:**
to. Mix the crushed oatmeal cookies with the melted butter.
b. Press this mixture into the bottom of a springform pan. Refrigerate while you prepare the filling.

2. **Prepare the filling:**
to. Preheat the oven to 160°C (320°F).
b. In a large bowl, beat the cream cheese with the sugar until smooth and creamy.
c. Add the eggs one at a time, beating well after each addition.
d. Stir in vanilla extract and sour cream. Mix well.
and. Add the crushed oatmeal cookies and mix gently.
F. Pour the filling over the base in the mold.

3. **Baking:**
to. Bake in the preheated oven for 45-50 minutes or until the center is almost set and the edge is lightly golden.
b. Turn off the oven and leave the cheesecake in the oven with the door ajar for about 10 minutes.
c. Take out of the oven and let it cool down. Refrigerate for at least 4 hours or overnight.

4. **Coverage:**
to. Once the cheesecake is well chilled, decorate with the oatmeal cookies cut into quarters or slices and, if desired, with whipped cream.
