75 Years of CAS: Celebrating the People Who Shaped Our History

Since 1952, Campus Auxiliary Services has played a role in the everyday experiences of the Geneseo community.

Over the decades, employees across dining, retail, and campus services have helped CAS grow and adapt alongside the College. Their work has supported generations of students, faculty, staff, and campus visitors.

As part of our 75th Anniversary celebration, we're sharing archival photos of CAS employees in different roles and locations throughout our history.

These images offer a glimpse into the people whose dedication helped build the organization we know today.

Do you recognize anyone or remember one of these locations? We'd love to hear your memories in the comments!

What's Cooking: A Day in the Life of a CAS Student Employee 🤘

Meet Tristan, a senior student employee at The Halal Shack, who gave us a behind-the-scenes look at a typical day balancing his responsibilities as a student and an employee of Campus Auxiliary Services.

Our student employees manage demanding schedules that often include classes, coursework, extracurricular activities, and work commitments. Their dedication, reliability, and contributions play an important role in supporting campus dining operations.

We're grateful to Tristan for taking the time to record and share his experience, and to all of our student employees for the work they do throughout the academic year.

CAS offers on-campus employment opportunities that help students gain professional experience while contributing to the Geneseo community.

Nutrifacts: 5 Foods & Nutrients for Brain Health

Nutrition plays an important role in overall health, including the nutrients our brains need to function.

This month, CAS Nutrition & Wellness Manager Heather Carrera highlights five foods and nutrients associated with brain health:
1. Fatty fish: Salmon, sardines, and trout provide omega-3 fatty acids, especially DHA, an important component of brain cell membranes.
2. Berries: Blueberries and other berries contain flavonoids and antioxidants that may help support cognitive function.
3. Leafy greens: Spinach and kale provide folate, vitamin K, lutein, and other micronutrients.
4. Nuts and seeds: Walnuts, almonds, chia, and flax provide healthy fats, vitamin E, magnesium, and plant-based omega-3s.
5. Eggs: Choline helps the body produce acetylcholine, a neurotransmitter involved in memory and learning.

Learn more about the relationship between nutrition, gut health, and mental well-being in Heather's latest Eats & Insights article, The Intersection of Mental Health and Nutrition.

Celebrating Culture and Community at uKnighted by Flavor!

The evening brought the Geneseo community together through food, culture, and shared experiences. Guests explored 13 recipes featured from student cultural group dinners, participated in activities, enjoyed raffle prizes, and experienced a live Bomba performance by Geneseo Valley Conjunto.

A special thank you to Chef Marissa for her ongoing collaboration with student cultural groups to bring their recipes and traditions to our dining halls, and to Chef Matt and the Red Jacket dining team for preparing the dishes that brought this event to life! We also extend our appreciation to FSU for participating and sharing information about their organization.

There’s a lot that goes into bringing a cultural dinner to the table.

For Chef Marissa Diogardi, head chef at Mary Jemison Dining Hall and our campus catering department, cultural dinners are a collaborative process.

Campus cultural groups work with our catering team to develop their menus, find specialty ingredients, and bring their dishes to life. Some ingredients require sourcing from specialty markets, while some student groups come into the kitchen to help prepare dishes and show our culinary team how they want their food prepared and plated.

After seven years of helping bring these dinners to campus, Marissa says one of her favorite parts is meeting new people and learning from them.

That collaboration is at the heart of uKnighted by Flavor, an evening celebrating the cultures and people that make our campus community unique.

What happens after your meal?

Sustainability at CAS goes beyond what happens in the dining hall.

Throughout Higher Education Sustainability Month, we're highlighting some of the partnerships and practices that help CAS reduce waste, support local sourcing, and contribute to a more sustainable campus.

That includes composting food waste with Natural Upcycling, recycling used cooking oil through Restaurant Technologies, recycling bottles and cans through our partnership with Arc GLOW, and working with local and New York State vendors to bring products to campus.

Follow along throughout October to learn more about the people, partnerships, and practices behind CAS sustainability.
