A unique setup in Downtown Los Angeles that Christopher Gibson looked at today. All of these restaurants tie into one fan.

A good way to get business is by handing out flyers. One of our Repair Techs was doing a job on this roof and noticed all the grease at another restaurant so when he was done he went over and gave them a flyer and they called for a bid.

A gallon of water weight 8 pounds. If you run your 5GPM pressure washer for 5 minutes, thats 200 pounds of water sitting in your cans. The more you scrape, the less water you have to haul 🤔

Wok cooking grease needs to be scraped almost every service. On long ducts like this it is good to have scrapers that you can attach to poles to get them clean.

Get those ansul pipes and links clean, and the fire suppression companies will love you. 💪 We have gotten comments from local fire suppression companies about how happy they are when they see our sticker.

We see this every once in a while. Some guys say it should be an extra charge but we always take them away as part of the job.

A tale of two different kitchen exhaust fan brands told by Christopher Gibson

Here is Christopher Gibson explaining how to get access to the vertical duct on these aluminum box fans that you see a lot at schools.

One thing that makes a real difference on the job is how you apply the degreaser.

Standard pump sprayers work, but the chemical tends to run off vertical surfaces pretty quickly. That means less contact time with the grease, more reapplication, and often more scrubbing or scraping later.

Foamers change that. The foam clings to the hoods, ducts, and fans and stays in place longer. That extra dwell time lets the chemical actually break down the grease instead of just sitting on top of it. When it’s time to rinse, a lot of the hard work is already done.

It’s not a magic fix, but it makes the process more efficient and the results more consistent.

Anyone who’s cleaned commercial kitchen exhaust systems knows the grease isn’t all the same.

Chinese restaurant kitchens tend to produce some of the toughest buildup we run into. Constant high-heat wok cooking with a lot of oil means the grease gets thick, sticky, and baked on hard in the hoods, filters, and ductwork. It doesn’t just wipe away — it takes real time, the right tools, and careful work to get it fully clean without damaging the system.

We’ve cleaned plenty of these systems over the years. It’s never a quick job, but it’s one we take seriously because proper grease removal keeps the kitchen safer and the exhaust running the way it should.

At Bryan Exhaust Tools, we design and supply the equipment that helps professional cleaners handle heavy grease jobs like these more effectively.

Old Ga***rd PCU and some dirty grease ducts found by Christopher Gibson
This one had been serviced a couple weeks before we inspected it and the fan was actually pretty clean along with the areas around the access doors.
