Sharing our roadtrip from FL to Utah. This is day 1, we drove from our home through half of Mississippi. We started out great until we realized we forgot to latch the fridge doors and found all of our food on the floor, including about 40 broken eggs spread everywhere 😬. Lesson learned, this will not happen again lol. Everything was cleaned and we enjoyed lunch and the rest of our day. Stay tune and let me know if you are interested in our trip!

One valuable lesson my wonderful mother has taught me is how to whip up a quick meal out of thin air. It truly shows how resilient and inventive she is. I made this healthy and delicious pasta in less than 20 mins. Time is never on our side but I encourage you to make an effort to make hearty meals at home rather than stopping at a drive through.
