Not all coffees know how to make an entrance, but this one definitely does.

One of the two coffees we’re hoping to have available in late July is this Pacamara Honey from Santa Emilia in El Salvador and it’s a really special one.

Pacamara is a variety with deep roots in El Salvador, known for producing coffees with a lot of complexity and presence in the cup. With a honey process, some of the fruit is left on the seed during drying, which helps create a sweeter, more syrupy, more fruit-forward profile.

What makes this one feel even more special is where it comes from. Santa Emilia is part of a coffee growing tradition that carries so much history, care, and intention, and that really comes through in the final cup.

We’ve been looking forward to this one: our El Salvador coffees will be landing soon, and if all goes well, they should be available in late July.

We’ve got a Pacamara Honey and a Geisha Natural on the way, and both feel especially meaningful to share. It’s special to get coffees that have been cultivated by the same family for generations. Coffees that carry so much history, care, and intention behind them.

Their coffee is hand harvested, processed with a strong focus on traceability, and produced across washed, honey, natural, and anaerobic methods. That kind of care shows up in the cup, and it’s a real honor for us to be able to share these two coffees with you.

Introducing the Epiphany team! 💡

At Epiphany, coffee has always been about more than what’s in the cup. It’s about creativity, community, curiosity, and the people who pour their hearts into every product we create and every client experience we’re a part of each day.

From the farms, to us, to the cafés we partner with, and finally to the people enjoying each cup, we believe every step of the process matters. We’re here to elevate quality, create meaningful connections, and bring intention to every part of the coffee journey.

Koenig 7-Devils Whiskey Barrel-Aged Radiate is a limited collaboration between Epiphany Coffee and created from a shared appreciation for flavor, process, and the patience it takes to make something memorable.

Aged before roasting in a Koenig 7-Devils Whiskey barrel, our Radiate blend takes on a smooth, layered depth while still carrying the warmth and balance that make it so approachable.

Koenig 7-Devils Whiskey Barrel-Aged Radiate is here!

This limited collaboration with Koenig Distillery begins with our Radiate blend aged in a Koenig 7-Devils Whiskey barrel before roasting. Carefully sampled and cupped throughout the process until the balance is just right.

The result: a smooth, layered coffee with Radiate’s approachable character and added depth from the whiskey barrel.

Crafted with patience, precision, and a shared love for local flavor.

This was another really special part of Austin’s El Salvador trip.

Outside of the recognition at Global Coffee Awards, he was also selected to compete in the on-site roasting competition at Producer Roaster Forum. About 40 people showed up, only 16 were chosen to compete, and Austin was one of only two people there representing the U.S.

It was a high-pressure format — 45 minutes to roast, cool, create profiles, sort, adjust, and make every choice count. It demanded focus, trust in your instincts, and a real commitment to quality.

And after an incredibly tight finish in the top three, Austin took second. 🥈

A really cool result, but the biggest takeaway is still the same: quality matters no matter what. 💡

Visiting Café de Don Justo in El Salvador was one of those experiences that stays with you.

There’s something special about getting to stand in a place where coffee has been cultivated by the same family for generations, in the Tecapa-Chinameca region of Usulután, and seeing up close how much care goes into every step.

Their family has been growing coffee for more than 80 years, with varieties like Red Bourbon, Pacamara, and Geisha all playing a part in what they produce. Their coffee is hand-harvested, processed with a strong focus on traceability, and they produce washed, honey, natural, and anaerobic processing methods to highlight the versatility of their crop.

What I appreciated most was the way that Justo presented his coffee. It felt personal. You can feel the history there.

The brand itself is inspired by Justo Pastor González, whose family began growing coffee in the area before 1938, and that long relationship to the land is a big part of what makes the visit meaningful.

Learning from Justo will always remind me that coffee's flavor starts at origin, and can only be something we enjoy if people like him continue to do what they're doing.

So the next time you're enjoying your favorite coffee or latte, take a moment to remember that coffee come from somewhere, and that it is grown by somebody💡
