Grease, oil and food residue build up fast back there, and that's what brings the smell, the flies and the rodents. A few tips from our crew:

1. Put it on a schedule. For restaurants and other high-traffic businesses, monthly or biweekly cleanings keep things under control.
2. Cold water won't cut it. Grease needs hot water and a real degreaser, or it just gets pushed around.
3. Watch the runoff. Greasy wash water shouldn't end up in the storm drain. We contain it, collect it and dispose of it properly.
4. Help it between cleanings. Keep lids closed, don't overfill, and clean up spills around the grease bin right away.

Heads up: old, deep-set stains can leave a shadow even after a good clean, and we'll tell you up front what to expect.
