Okay guys and gals! I found a replacement for me when the rest of the family is having pizza. I’m just starting low carb in an effort to control blood sugar. I doubled the recipe to make a whole cookie sheet of it so we could share. I used 2 cups shredded mozzarella, 2 cups Parmesan, 2 eggs and 2tsp Italian seasoning. I mixed it all up and spread it on a parchment lined cookie sheet, topped with pepperoni and baked at 350 for 25 min. The whole sheet pan is 24-25 carbs. I’m eating 1/4 of it with a couple spoons of pizza sauce for dipping.

finally bought a mini waffle maker on Black Friday ($10 at Bi-Mart) yesterday and made my own. I thought they were great! My husband is on the fence, still adjusting to the idea of low carb options tasting different than traditional. Added butter and peanut butter for breakfast but may use them as "bread" for ham sandwiches later today. I used:
3 large eggs
1 cup shredded mozzarella cheese
1/4 cup almond flour
1/2 teaspoon baking powder
Mix it up, heat waffle maker and spray with olive oil cooking spray. 1/4 cup batter and cook for 3 minutes.

Look at the amount of sugar in ketchup!

Someone on this site noted that Olive Garden now offers Zoodles instead of noodles. We went there for me to check it out, and yes Zoodles are on the menu. I ordered the salmon picata with Zoodles for my side. Just fabulous! Who needs pasta with this side available. I almost always cut my portions in half and take home for the next day! Enjoy!

From top to bottom we have;
Beef Taco Salad
Tuna Salad lettuce Boats
Chicken Fajitas with cauliflower rice
Big Salad
Roasted asparagus, cucumber, hard boiled eggs and celery for snacks, ham egg "muffins" for breakfast.
Also coming along is homemade ranch and deli meats and cheese for snack!

So last night i experimented... and let me just say holy keto heaven 😍 keto cheesecake mousse!! Simplest recipe ever. 2 cups of heavy whipping cream, one packet of sugar free cheesecake pudding mix, and a little dash of vanilla extract 😉 it absolutely satisfied my sweet tooth and so easy to make

Add stevia
Heavy cream

My revision to the 90 second bread and I’m liking it.

In a bowl melt
1 tablespoon butter
Then add
One to two splashes of heavy cream
1 egg ,
3 tablespoons ultra fine blanched almond flour ,
1/2 teaspoon baking powder
1 teaspoon powdered Erythritol ( sweetener )
1/4 teaspoon vanilla extract
A few dashes of everything bagel seasoning 

Mix well  put into a greased glass container or ramekin and cook for 90 seconds in the microwave let cool slice in half and toast in a pan with butter .

French Toast…… with no 🍞!!!!!!
And it is AMAZING!!!
Quick and easy, we put it in the oven….. went for our walk and it was ready to eat when we got home!!!
This version (perfect for 2)
5 eggs
5oz cream cheese
2 TBSP butter
And splash of vanilla
Preheat oven to 350.
Soften cream cheese, add eggs, butter and mix until smooth.
Spray loaf pan and add ingredients.
Bake at 350 for 40-45 minutes.
Let cool, then remove from pan.
Slice and then flash fry in skillet (butter).
Ready to serve, enjoy with berry’s or sugar free syrup and let your taste buds party!!
Never know it isn’t 🍞!

Pizza Casserole
It was so good that we didn’t think to take a picture until we had started eating!! ❤️❤️
1/2 pound mild Jimmy Dean Sausage
1 pound ground beef
1 yellow onion
1 bell pepper
Pepperoni
Mushrooms
(Any additional pizza toppings you like)
Mozzarella cheese
Parmesan cheese
Marinara sauce (Raos)
Olive oil
Use a 9x13 casserole dish.
Cook meat and drain. Salt/pepper to taste.
Cook onions, peppers and mushrooms with Olive oil.
Pour marinara sauce in the bottom of casserole dish.
Add meat, onions, peppers, mushrooms.
Add both cheeses to the top.
Add pepperonis.
Cool at 350 degrees for 20 minutes or until bubbly.
Enjoy!
