Fukuoka yatai street food comes alive after sunset, when more than 100 tiny food stalls open across Fukuoka, Japan.

Along the Naka River and throughout areas such as Nakasu and Tenjin, these portable Japanese food stalls transform the city’s sidewalks into intimate nighttime kitchens. Many yatai accommodate only five or six diners, placing visitors shoulder-to-shoulder with local customers and the chefs preparing their food.

Come with us as we explore Fukuoka’s street-food culture, watch yakitori grilling over charcoal and discover local favorites including spicy mentaiko and steaming motsunabe.

Mentaiko was developed in Fukuoka in 1949 and became one of the city’s most recognizable foods. Motsunabe—an aromatic hotpot made with beef offal, cabbage, garlic and chives—is another beloved Fukuoka specialty.

We tried Fukuoka tonkotsu ramen at a riverside yatai—an open-air Japanese food stall—and learned that this famous ramen style began in Kurume, Fukuoka Prefecture, in 1937.

Hakata ramen is known for its creamy pork-bone broth and super-thin straight noodles. When you finish the noodles but still have broth left, you can order kaedama—an additional serving of freshly cooked noodles.

Our Fukuoka ramen night became one of the best surprises of our Japan trip. Would you try tonkotsu ramen at a traditional yatai?
