Blueberry Banana Bread With Blueberry Coconut Cream Icing ๐๐
Cake ingredients:
1 cup fresh blueberries
1 1/ 4 cup flour
1 teaspoon cinnamon, powder
1 teaspoon vanilla, powder
1/ 2 cup plant based milk
2 whole bananas, ripe and mashed
2 teaspoons apple cider vinegar
1 cup coconut sugar
1/ 2 cup coconut oil, melted
1 teaspoon baking soda
2 teaspoon baking powder
2 tablespoons squeezed lemon.
Coconut and Blueberry Frosting Ingredients:
3/4 cups unsalted butter, softened
1 teaspoon vanilla extract
6 cups sifted, plus more for blueberry frosting Imperial Sugar Confectioners Powdered Sugar
2-4 tablespoons milk or heavy cream
1 teaspoon coconut extract
2-3 tablespoons chilled Blueberry Syrup
Shredded unsweetened coconut
Fresh blueberries to garnish
METHOD for Cake:
STEP 1
Preheat your oven to 350F. Grease the loaf pan. Add the apple cider vinegar to the milk, stir and set aside.
STEP 2
Dust your blueberries with flour. Mix your dry ingredients together in a large mixing bowl.
STEP 3
Mix your wet ingredients in a medium bowl, including your milk with apple cider vinegar. Mix everything well. Mix your wet into your dry. Stirring until combined. Fold in your wild blueberries.
STEP 4
Bake for 1 hour or until the center is cooked. Remove from the oven and let cool completely before frosting.
METHOD for Icing:
STEP 1
Cream butter until light and fluffy, about 3 minutes.
STEP 2
Add vanilla extract and combine.
STEP 3
Gradually add powdered sugar while mixer is on low, alternating with milk 1 tablespoon at a time. Scrape bowl well then whip until very light and fluffy, about 4-6 minutes.
STEP 4
Add coconut extract and blueberry syrup. More powdered sugar may be necessary for a thicker consistency.
STEP 5
Ice the bread and Enjoy ๐
