Lemon Drizzle Cake ππ°
This classic Lemon Drizzle Cake is a perfect balance of zesty and sweet. With a light, fluffy texture and a tangy lemon glaze, itβs the ideal treat for any time of day β from afternoon tea to a casual dessert. Fresh, bright, and utterly irresistible!
Ingredients:
π° Self-raising flour: 250g
π Caster sugar: 200g
π§ Butter: 200g, softened
π₯ Eggs: 3 large
π Lemons: 2, zest and juice
π₯ Whole milk: 50ml
π₯ Baking powder: 1 tsp
For the drizzle:
π Lemon juice: 50ml (from the lemons above)
π Caster sugar: 100g
Method:
π° Preheat the oven to 180Β°C (fan) and line a loaf tin (approximately 23x13cm) with baking paper.
π§ Cream the butter and caster sugar together in a large bowl until light and fluffy.
π₯ Beat in the eggs one at a time, adding a spoonful of flour with each egg to prevent curdling.
π Fold in the zest of the lemons, followed by the flour, baking powder, and milk. Mix until smooth and fully combined.
π§ Pour the batter into the prepared tin and smooth the top.
π₯ Bake in the preheated oven for 40β45 minutes or until a skewer inserted into the centre comes out clean. Let the cake cool in the tin for 10 minutes before transferring it to a wire rack.
π For the drizzle: while the cake is cooling, mix the lemon juice and caster sugar in a small bowl until the sugar dissolves.
π° Once the cake is completely cool, prick the top with a skewer and pour the lemon drizzle over the cake, allowing it to soak in.
