Swicy Cauliflower Tacos; easy and delicious dinner inspo🤤✨
Ingredients (Serves 2)
1 Jack’s cauliflower
1 Jack’s red onion
250 ml Jack’s malt vinegar
250 ml of boiling water
1 tbsp sugar
1 tbsp salt
Jack’s Honey
Jack’s Garlic
Jack’s Ketchup
Encona Original Hot Sauce
Filippo Berio Extra Virgin Olive Oil
1 avocado
1 handful of Jack’s coriander
1 tbsp plant-based Alpro yoghurt
2 Jack’s lime
6 mini tortillas
Old El Paso jalapeños
Method
For the red onions:
1) Thinly slice your red onions then add to a seal proof jar
2) Add the vinegar and boiling water to a pot and add 1 tbsp each of salt and sugar
3) On a medium heat let it simmer for 5 minutes. Let it fully cool before pouring over your thinly sliced red onions
4) Leave it to sit for at least 4 hours in the fridge
For the cauliflower:
1) Break your cauliflower up into bite-size pieces then add to a baking tray
2) Add 3 garlic cloves, 2 tbsp ketchup, 2 tbsp honey, 2 tbsp hot sauce, 1 tbsp olive oil and a pinch of sea salt to a blender and blitz well
3) Pour over your cauliflower, give it a good mix then bake in the oven for 30 minutes at 180°C.
For the avo sauce:
1) Blend 1 avocado, 2 tbsp yoghurt, 2 limes, a handful of coriander and a pinch of sea salt.
To serve:
1) Lightly toast your tortillas in a pan with some olive oil
2) First add your avocado mixture, then load on your cauliflower, pickled onions, jalapenos and coriander
