Fresh, crunchy, colourful, and perfect for pool days — these Mini Mediterranean Mezze Boats are an easy way to serve something light but still full of flavour. ☀️💦

They’re great for grabbing between swims, and they look so pretty on a summer snack tray.

What you’ll need:
🥬 Romaine or butter lettuce leaves
🧆 Hummus
🥒 Diced cucumber
🧀 Crumbled feta
🫒 Sliced olives
🌶️ Roasted red peppers
✨ Crispy chickpeas
🍋 Optional: lemon juice or fresh herbs

How to make them:

Wash and dry your lettuce leaves so they hold their shape.
Add a spoonful of hummus into each lettuce boat.
Top with diced cucumber, feta, olives, and roasted red peppers.
Sprinkle crispy chickpeas on top for crunch.
