Looks like winter isn't quite finished with us yet! Meal prep day is also a little late but hey, I had a date with a handsome boy on Sunday.
I whipped up one of my favorite comfort food soups to get me through to spring. Hamburger macaroni. Its quick, easy, cost effective and made with only 6 ingredients in under 30 mins.

- 1 lb ground beef
- 1 box Campbells beef broth
- 1 large can chopped canned tomatoes
- 1 can Hunts 4 cheese spaghetti sauce
- 1/2 package frozen mixed veggies
- 1 1/2 cup dry macaroni noodles
- 2 cups water
- garlic powder, onion powder, salt, pepper to taste

Place Hunts,chopped tomato, beef broth and water into a large pot. Simmer on low while you brown and season the ground beef. Once beef is cooked add to pot. Then add your noodles and simmer until macaroni is cooked. Throw in your mixed veg, cook for 5mins.


This made a nice big pot that I portioned out. 3 large individual servings to freeze, 1 bowl for lunch today and lots leftover for supper for the family tonight.
