Tonight we cooked the chicken Etouffee for our cook along dish. Etouffee is the Cajun word for ‘smothered’ - and the sauce did smother the chicken. It was delicious.

It is a Cajun dish so I was expecting something quite spicy. It was not as spicy as I expected, although if you want a bigger spicy hit it would be easy to increase the amount of Cajun spices used, or add extra chillies or both.

We paired ours with my buttermilk bread that I made earlier in the week instead of the rice or couscous suggested in the recipe as hubby is not fond of either.

The recipe was easy to follow, and the roux that we made first was silky smooth and very tasty.

To make it go further, extra chicken could easily be added.

Just pulled this monster loaf out of the oven. It smells wonderful. Too late for world bread day, but still inside the month. Very impatiently waiting for it to cool enough to taste it.

This week’s cook along dish is a chicken dish which I am keen to try. It is a Cajun dish so has a spice kick to it, which you can vary by using less or more of the spices.

Yesterday was International Bread Day

Tonight for our cookalong we made lasagne soup. A very quick and easy recipe that uses open pot cooking mode on the TM7. Owners of other models may need to use a pot on the stove for some of it.

Not many ingredients, but lovely flavour to it. We paired ours with some sourdough bread my brother left with us. Great combination.

If you don’t have fresh pasta, you could use the dried version, and cook it a little longer. It is supposed to serve 4 but hubby went back for several seconds, so ours didn’t serve 4. We did add extra meat in ours to use up the 500 g packet of mince.
