What is HACCP/GMP cleaning?
(Riveting installment #7)
2. Physical Hazards
-Glass
-Nuts, washers, bolts
- Pieces of machinery
-Packaging materials
- Insects and parts
-Paint Flakes
-Animals
- Rodent hairs excreta
- Pen Tops
- Jewellery
-Smokers waste
- Cleaning Materials
- Wood
- Harmful plants

Glass is a high risk contamination in food
- Do not bring glass into production areas
-Cover any glass present in case of breakage (e.g. lights)
-If any glass is broken, stop the process and thoroughly clean.

Physical Contamination
Wood is a high risk contaminate in food
- Do not bring wood into the preparation area
- Wooden implements (like broom handles) should be replaced.
Metal is a high risk contaminate in food
- Ensure nails and screws don’t get into the product
- Damaged equipment can allow pieces of metal to enter the product
- Food contact surface must be thoroughly cleaned after drilling, welding or other maintenance work is conducted.

Personal Effects can be a hazard.
- Don’t wear jewellery or watches when handling food
-Wear your uniform correctly
- Don’t keep personal effects in your top pocket when working with food.

Physical Contamination

Other sources of Contamination:
- Insects and parts of pests
-Hair
- Clothing
- Packaging materials
-Paint flakes
-Smokers waste

How can Physical Hazards be controlled?
Control methods include raw material inspection and specification, vendor certification and letters of guarantees, metal detectors, x-ray technology (to detect bone fragments), effective pest control in the facility, preventative equipment maintenance and proper professional sanitation procedures. In addition, proper maintenance and calibration of detection equipment is vital. Also important are appropriate handling of packaging material, proper shipping, receiving and storage practices as well as tamper-proof or tamper-evident packaging. Equally important is employee education, since a significant portion of items reported in food products are personal effects dropped by employees. It is also worth considering less obvious methods of prevention like protected light fixtures and controlling contact between pieces of machinery.
We're getting there!! -to be continued- Cheers Neil

What is HACCP-GMP Cleaning?
(Wildly riveting bedtime reading installment #6)
Hazards
HACCP focuses on three (3) types of hazards:
-Chemical
- Physical
- Biological
These three hazards have the potential to cause adverse health effects when present at an unacceptable level.
Chemical Hazards
-Pesticides
- Antibiotics
- Metals
- Preservatives
- Nitrates
- Cleaning Chemicals
-Vitamins
- Allergens

Cleaning Chemicals can be a source of contamination.
-Store chemicals correctly where drips/spills can’t affect food or packaging
- Rinse surfaces to remove chemical residue
-Never use chemicals where splashes/spills can contaminate food.

Pest Control Chemicals can be very toxic
- Leave pest control to licenced professionals
- Only conduct pest control when all food and packaging is covered and protected
-Wash down any surfaces

Other contamination sources can be:
-Lubrication used on equipment
- Allergens – specific compounds (like nuts) which affect some of the population.

How can Chemical Hazards be controlled?
Perhaps foremost in controlling chemical contamination are proper storage and handling practices. Chemicals should be stored separately from food products and packaging materials to avoid contamination. Special care should be taken to thoroughly rinse cleaning products and sanitizers from equipment during clean-up, especially in areas where liquid tends to accumulate. In addition, only approved chemicals should be used during cleaning and sanitizing. Pest control should be performed by professionals and chemical residues in incoming food products should be controlled. Other actions that may be taken include the use of approved chemicals only, keeping of an inventory of all chemicals, colorings and additives, frequent review of current procedures and formulations as well as audits of chemical use, adequate employee training and in-house testing.
It is also good policy to keep up with new regulations.

What is HACCP Cleaning?
(Mildly amusing fact-installment #5)
HACCP has its origins in the US manned space flight programme of the 1960s and '70s. It was vital that the food provided for astronauts was completely free from foodborne pathogens and other hazards, since any illness in flight would have serious consequences. NASA, in collaboration with the Pillsbury Company, therefore adapted analytical techniques used to anticipate failures in the engineering industry to develop the first HACCP system.
This early version of HACCP has since been further developed by the food industry and over the last 20 years it has been widely adopted by many food manufacturers. More recently, HACCP has increasingly become a basic requirement of complying with food safety regulations in many countries.

Why do we need HACCP ?
- Consumers want safe food
Customers demand assurance of safety.

Governments legislate for it.

What is HACCP cleaning?
(Semi-riveting installment #4)

HACCP Principles
The HACCP system is based on, and defined by, seven (7) underlying hazard principles.

- Define process: how is it supposed to work?
- Hazard Analysis: what can go wrong?

Example: You use water in making ice. That’s the process.

The hazard is that the water might be contaminated.

HACCP Principles

-Define Control Points
-Set Critical limits
Example: You can control contamination in water at the point that it comes out of the tap.
“Critical limits” are the acceptable levels of lead, intestinal parasites etc.

The Seven Hazard Principles of HACCP
Principle 1: Conduct a hazard analysis (identify hazards and control measures).
Principle 2: Identify/Determine the Critical Control Points (CCPs). It is often the last step at which you can prevent, eliminate, or reduce the risk of food hazards. Examples of CCPs include thermal processing, chilling, testing ingredients for chemical residues, product formulation control, and testing product for metal contaminants
Principle 3: Establish critical limit(s).
Principle 4: Establish a system to monitor control of the Critical Control Points.
Principle 5: Establish the corrective action to be taken when monitoring indicates that a particular CCP is not under control.
Principle 6: Establish procedures for verification to confirm that the HACCP system is working effectively.
Principle 7: Establish documentation concerning all procedures and records appropriate to these principles and their application.
Legislation prescribes food characteristics

What is HACCP cleaning?

(Riveting installment #3)
The end objective of HACCP is to make the product as safe as possible and to be able to prove that the product was processed as safe as possible. This does not mean that HACCP provides 100% assurance of food safety to consumers but does mean that a food processing company is doing the best job possible for safe food production.
The assurance of safety comes from the process of identifying the hazards, establishing controls for the potential or identified hazards, monitoring the controls and periodically verifying that the system works.

HACCP Does not Stand Alone
The application of HACCP does not stand alone in a food processing facility. The plan must be built on other food safety programs. Good Manufacturing Practices (GMP) that are practiced by the processing facility will support HACCP plan and will address food safety and food quality issues that are not critical for the reduction of food safety hazards.
