I've led the dining room for about a year and a half now, and one thing that continues to amaze me are the young people who truly give a damn. Tonight I worked with three of them - one of them worked in the dining room before I took the keys from Crouse, and the other two I hired. All three are workhorses; they are all-stars.
The one that was already there has gone from being one of our best hosts to becoming one of the best servers in the entire building. The other two are relatively new, but certainly young hosts. As we began to slow down tonight, one of them *asked* to go into the kitchen to help catch up on dishes. What does that tell you about her character?
That co-server of mine tonight and I were talking behind the counter as we watched the other workhorse of a host go out to one of my tables that had just gotten up and left. The table was a mess and there was a lot to do. I love to tease, so I told the other server to sit down at the nearest table with me, which was behind that hard-working host, cleaning up that messy table. We both sat there, without expression, until the host turned around. Her hands were completely full of cups and dishes.
The other server just clapped while I sat there and smiled. We didn't have a lot of tables left at that point but I noticed a few of them watching and then laughing and smiling once they realized what was going on.
I can't say enough about what's going on in the Angelina's dining room. If you have not already done so, please check it out. It's a fresh space and we've got a fantastic team who doesn't just give a damn, but who has fun.
