Meal Prep Monday, but make it effortless ✨�Because who doesn’t love a one-pot wonder that feeds you all week and keeps the kitchen calm? This cozy taco-inspired pasta is hearty, comforting, and perfect for busy weeks when you want something homemade without the chaos. Minimal dishes, maximum flavour—Sunday Best approved.
🌮🍝 One-Pot Taco Pasta
Ingredients�• 1 tbsp olive oil�• 1 white onion, finely chopped�• 1 red bell pepper, chopped�• 1 lb lean ground beef (or 12 oz Impossible Meat)�• 2 tbsp homemade taco seasoning (or 1 packet)�• 1 tsp smoked or sweet paprika�• 1 tsp ground cumin�• 1 (14.5 oz) can diced tomatoes�• 1 (4 oz) can chopped green chilis�• 8 oz elbow pasta�• 2 cups beef or vegetable broth�• 1 cup shredded cheddar cheese�• ¼ cup fresh cilantro, chopped�• 2 tbsp fresh lime juice (about 1 lime)�• 1 tbsp hot sauce, optional�• Salt, to taste
Optional toppings�Chopped green onions, sour cream, lime wedges
Method�1️⃣ Sauté & brown�In a large pot over medium-high heat, warm the olive oil. Add onion and bell pepper and cook until just softened, about 2 minutes. Add ground beef and break it up with a spoon. Reduce heat to medium and cook until mostly browned, 3–5 minutes. (Plant-based meat will take closer to 2–3 minutes.) Drain excess grease if needed.
2️⃣ Build the flavour�Stir in taco seasoning, paprika, cumin, diced tomatoes, and green chilis (with their juices). Add dry pasta and toss to coat. Pour in broth and stir well.
3️⃣ Simmer�Bring to a gentle boil, then reduce heat to low, cover, and simmer for 13–15 minutes, stirring occasionally, until pasta is tender.
4️⃣ Finish with love�Remove from heat and stir in cheddar until melted. Add cilantro, lime juice, and hot sauce if using. Taste and season with salt as needed.
Let rest for 3–5 minutes to thicken, then serve topped with green onions, sour cream, and an extra squeeze of lime.
